One of champagne’s best kept secrets, ayala has been under the ownership of the bollinger family since 2005. Known for its chardonnay dominant, low dosage style, the house has been revitalised under expert leadership. Brut majeur extra age has been recognised by decanter as a ‘must try fizz,’ earning an impressive 94 point score. True to its name, it spends an additional 12 months ageing in the cellars, developing into an opulent and complex champagne that delivers far beyond its price point. Expect purity and balance, with rich citrus and toasty notes complemented by fine, elegant bubbles.
