This is chardonnay at its purest. Chablis is the ultimate expression of unoaked chardonnay, and few do it better than la chablisienne. Founded in 1923, this pioneering co operative has played a major role in putting chablis on the world stage, and continues to set the standard for the region today. The grapes come from vineyards rooted in kimmeridgian limestone – fossil rich soil that, combined with the cool climate, brings out chardonnay’s trademark freshness and flinty minerality. Fermented in stainless steel, this is bright, focused and classically chablis. Expect citrus, green apple and a crisp, saline finish. Perfect with oysters or fresh seafood.
