Devaux is a champagne house with deep roots in the côte des bar – a subregion known for its pinot noir, but here showing the power of chardonnay. Devaux is part of a growers' collective that focuses on sustainable viticulture and long lees ageing, giving their wines richness and texture. This blanc de blancs is made exclusively from chardonnay and aged on lees for a minimum of 3 years. The result is elegant and expressive, with notes of lemon zest, green apple and almond, plus a creamy mousse and mineral finish. Perfect with oysters, goat’s cheese tart or grilled langoustines.
